Pilgrim’s Landing Pizza

Ingredients

  • 1 (4-serving) package sugar-free vanilla cook-and-serve pudding mix
  • 1 cup reduced-calorie cranberry juice cocktail
  • 3 cups fresh or frozen cranberries
  • 1 (8-ounce) package fat-free cream cheese
  • 1 (11-ounce) can refrigerated French bread
  • 1 1/2 cups (8 ounces) diced cooked turkey breast
  • 1/2 cup (2 ounces) chopped walnuts

Instructions


Preheat oven to 415°. In a large saucepan, combine dry pudding mix and cranberry
juice; stir in cranberries. Cook over medium heat until mixture starts to boil and cranberries soften, stirring constantly. Remove from heat. Stir in cream cheese. Place saucepan on a wire rack and allow to cool while preparing crust.
Unroll French bread dough and pat into a 10-x-15-inch rimmed baking pan. Bake for 10 minutes. Evenly spread cranberry mixture over partially baked crust. Sprinkle turkey and walnuts evenly over top. Continue baking for eight to 10 minutes or until crust is golden brown. Place baking pan on a wire rack and let set for five minutes. Cut into eight servings.
