Hedge Hogs

Ingredients

  • 2 cups shelled walnuts
  • 1 cup pitted dates
  • 2 cups shredded coconut
  • 1 cup brown sugar, firmly packed
  • 2 eggs, slightly beaten

Instructions


Preheat oven to 350°. Chop dates and nuts in a food processor using a coarse blade. Mix with 11/2 cups coconut, brown sugar, and eggs. Shape mixture into balls about 3/4-inch thick and 2 inches long. Roll in remaining coconut (adding more if needed). Place on a greased baking sheet and bake for 10 to 12 minutes.
Yield: Three dozen cookies.
