Pink Cherry Cupcakes

Ingredients

  • 21/4 cups flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 (5-ounce) jar maraschino cherries
  • Milk
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup butter or margarine, softened
  • 3/4 cup sugar
  • Instructions


    Mix flour, baking powder, and salt in a bowl. Drain cherries, reserving syrup; add enough milk to syrup to make 2/3 cup. Mix syrup, eggs, vanilla, butter or margarine, sugar, and cherries until blended. Add to dry ingredients; mix until smooth.
    Spray a muffin pan with nonstick spray. Fill cups with batter and bake at 325° for 30-35 minutes or until done.
