Recipe of the Month Fruits and Vegetables - Grilled Mushrooms



INGREDIENTS
  • 4 portabella mushrooms
  • 1 cup goat or feta cheese
  • 1 red sweet pepper
  • Olive oil
  • Garlic salt

INSTRUCTIONS
Trim stems from mushrooms; brush both sides with olive oil and sprinkle with garlic salt. Cut pepper into small strips and sauté with a bit of olive oil. Grill mushrooms on one side for 2 to 3 minutes and layer three to four strips of pepper and cup of cheese on each mushroom. Grill an additional 2 to 3 minutes. Serve with a salad.
