Meats & Seafood - Hash Brown Chicken Casserole

  • 2 pounds shredded-type hash browns
  • 2 sticks butter or margarine
  • 1 can cream of chicken soup
  • 1 cup grated cheese
  • 1/2 cup chopped onion
  • 1 (8-ounce) container sour cream
  • 1/2 cup milk
  • 2 cups chopped chicken, diced
  • Salt and pepper to taste
  • 1 sleeve Ritz crackers, crushed

Melt 1 stick butter or margarine in bottom of baking dish; add hash browns, spreading evenly. Combine soup, cheese, onion, sour cream, milk, chicken, salt, and pepper; pour over hash browns. Combine crushed crackers with 1 stick melted butter; spread over mixture. Bake at 350ยบ for 45 minutes.
Note: The casserole can be frozen cooked or uncooked. If cooked, sprinkle with cheese to reheat.
