Breads, Rolls, and Muffins - Holiday Pumpkin Bread



INGREDIENTS
  • 2 cups self-rising flour
  • 3 cups sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • 2 eggs
  • 1 (15-ounce) can pumpkin
  • 1 cup oil
  • 1 teaspoon vanilla
  • 1/2 cup chopped pecans

INSTRUCTIONS
Preheat oven to 350ยบ. Grease and flour two 8-x-4-x-2-inch pans.
In a bowl, combine flour, sugar, cinnamon, nutmeg, and allspice. In another bowl, combine eggs, pumpkin, oil, and vanilla. Mix well. Stir in dry ingredients; fold in pecans.
Spoon batter into prepared pans. Bake for 65-75 minutes. Cool, then tightly wrap loaves and freeze until ready for use.
Yield: 4 to 6 servings per loaf.
