Fruits and Vegetables - Broccoli and Cauliflower Cheese Soup with Sausage

  • 2 tablespoons ( stick) butter
  • 4 ounces smoked beef sausage or kielbasa, quartered lengthwise and sliced crosswise
  • 1 medium onion, chopped
  • 1/2 teaspoon caraway seeds, crushed
  • Fresh ground pepper to taste
  • 1 pound russet potatoes, peeled and sliced
  • 2 (14-ounce) cans chicken broth
  • 1 bay leaf
  • 1 1/2 cups bite-size fresh broccoli florets
  • 1 1/2 cups bite-size fresh cauli-flower florets
  • 1/4 cup whipping cream
  • 3 ounces sharp Cheddar cheese, grated
  • Salt to taste
  • Crushed caraway seeds

Melt butter in a heavy medium saucepan over medium heat. Add sausage and cook until it begins to brown, about four minutes. Remove sausage from pan with a slotted spoon. Add onion, teaspoon caraway seeds, and pepper. Reduce heat to medium-low and cook four minutes, stirring occasionally. Mix in potatoes. Add chicken broth and bay leaf. Simmer for about 25 minutes until potatoes are tender, stirring occasionally and breaking up potatoes with a spoon.
