Fruits and Vegetables - Pineapple Secrets

  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 (No. 2) can crushed pineapple and juice
  • 1 3/4 cups self-rising flour
  • 1 cup brown sugar
  • 1 1/2 cups oats
  • 3/4 cup butter or margarine

For filling, combine granulated sugar and cornstarch in a small saucepan; add pineapple and cook over medium heat until thick; set aside.
Combine flour, brown sugar, and oats; cut in butter until crumbly. Place half of mixture in a greased 9-x-13-inch pan; pat down firmly. Spread filling evenly on top; add remaining crust and pat down as firmly as possible. Bake at 400ยบ for 25-30 minutes. Cool and cut into bars.
Yield: 20 bars.
