Breads, Rolls, and Muffins - Banana Nut Bread



INGREDIENTS
  • 3/4 cup bananas, mashed
  • 1/2 cup butter or margarine, melted
  • 1 cup sugar
  • 2 eggs, slightly beaten
  • 1 1/4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup broken pecans

INSTRUCTIONS
Preheat oven to 325°. Cream together bananas, butter or margarine, and sugar. Add eggs and mix. Add remaining ingredients and mix well. Pour into a greased 9x5x3-inch loaf pan. Bake 45-55 minutes until golden brown or a toothpick inserted in the center comes out clean.
Note: To make 12 muffins, pour mixture into muffin tins and bake 15 to 20 minutes.
