Fruits and Vegetables - Cinnamon Pickle Rings



INGREDIENTS
  • 2 gallons sliced large ripe cucumbers
  • 2 cups lime
  • 8 1/2 quarts water
  • 3 cups white vinegar
  • 1 small bottle red food coloring
  • 1 teaspoon alum
  • 8 sticks cinnamon
  • 2 cups water
  • 1/2 cup candy red hots
  • 4 whole cloves for each jar
  • 10 cups sugar
  • Water

INSTRUCTIONS
Slice cucumbers 1/3-inch thick. Cut center out of each slice, removing seeds and forming a ring. Soak for 24 hours in lime mixed with water. Drain and wash cucumbers.
Cover with tap water; soak for three hours and drain.
Mix 1 cup vinegar, food coloring, alum, and enough water to cover. Simmer two hours. Drain and discard water. Don’t wash cucumbers.
Mix cinnamon sticks, 2 cups vinegar, 2 cups water, sugar, and red hots; add to cucumber rings and bring to a boil. Fill jars and add cloves to each jar; seal. (Have lids in boiling water for better sealing).
