Fruits and Vegetables - Green Tomato Pickles

  • 2 gallons sliced green tomatoes (or very small whole green tomatoes)
  • 3 large white onions, sliced
  • 2 red bell peppers, sliced
  • 1 green bell pepper, sliced
  • 1/4 cup salt
  • 4 cups sugar
  • 2 tablespoons mustard seed
  • 1 1/2 teaspoons turmeric
  • 1 red hot pepper, chopped
  • 3 cups apple cider vinegar

Place tomatoes, onion, and peppers in a large bowl. Add salt and mix well. Cover with ice; allow mixture to stand for two hours. Drain.
In a large pot, combine all other ingredients. Add vegetables. Bring to a slow boil. Fill hot jars and seal.
Yield: Six to eight pints.
