Cakes and Pies - Vanilla Wafer Fruitcake

  • 1 pound (5 cups) vanilla wafers
  • 1 pound pecans, chopped
  • 1/2 pound candied cherries
  • 1/2 pound candied pineapple
  • 1/4 pound raisins
  • 2 eggs
  • 1/2 cup white sugar
  • 1 small can evaporated milk
  • 1/4 teaspoon salt

Crush vanilla wafers with a rolling pin. Chop fruit and nuts, reserving a few whole fruit and nuts for decorating top of cake. Combine wafer crumbs and chopped fruit and nuts. Beat eggs well and add sugar. Add salt and milk; mix well. Add wafer mixture and mix well.
Allow mixture to stand while preparing loaf pan by placing waxed paper in bottom. Pack mixture into loaf pan and decorate top of cake with reserved whole fruit and nuts. Bake at 350° for 40 minutes.
If desired, add flavor by wrapping cake in a cloth moistened with wine.
