Cakes and Pies - Tropical Butter Frosting



INGREDIENTS
  • 1/4 cup butter or margarine
  • 1 (1-pound) box powdered sugar
  • 1/4 cup crushed pineapple, lightly drained
  • 2 tablespoons sour cream
  • 3/4 cup flaked coconut
  • 2 teaspoons orange peel, coarsely grated
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt

INSTRUCTIONS
In a large bowl, beat butter until soft. Gradually beat in sugar alternately with pineapple and sour cream until mixture is fluffy and smooth. Stir in coconut, orange peel, vanilla, and salt. Spread on cake.
