Cakes and Pies - Pear Parfait Pie



INGREDIENTS
  • 1 (3-ounce) package lime gelatin
  • 1 1/4 cups hot water
  • 1 pint vanilla ice cream
  • 1 tablespoon lemon juice
  • 1 1/2 cups pears, diced
  • 1/4 cup almond slices, toasted
  • 1 (8-inch) pie shell, baked
  • Whipped cream for garnish

INSTRUCTIONS
Dissolve gelatin in hot water in a two-quart saucepan. Add ice cream by spoonfuls, stirring until melted. Add lemon juice.
Chill until thickened but not set. Fold in pears and almonds. Turn into pie shell and chill until firm. Garnish with whipped cream.
Yield: Six servings.
