Desserts - Strawberry Pie



INGREDIENTS
  • 1 9-inch baked pie crust
  • 3-oz. of cream cheese, softened
  • 3 tbsp. cornstarch
  • 4 cups capped
  • strawberries
  • 2/3 cup sugar
  • ¼ cup water
  • Red food coloring

INSTRUCTIONS
Spread cream cheese
on bottom and up the sides
of the pie crust. Place
capped strawberries in the
pie crust over the cream cheese. Mash enough strawberries to equal 1 cup. Stir together sugar and cornstarch. Gradually stir in water and crushed strawberries. Cook over medium heat; stirring constantly until mixture
thickens and then boil for 1 minute. Mix in a few drops of red food coloring, if desired. Spread mixture over berries. Chill at least 3 hours before serving.
