Breads, Rolls, and Muffins - Strawberry Bread

  • 1 cup butter, softened
  • 11/2 cups sugar
  • 1 tsp. vanilla
  • 1 tsp. salt
  • 1 tsp. lemon juice
  • 1/2 cup strawberry jelly or jam
  • 1/2 tsp. baking soda
  • 1/2 cup sour cream
  • 1/2 tsp. red food coloring
  • 4 eggs
  • 1/2 cup chopped pecans
  • 3 cups plain flour
  • 1 tbsp. butter
  • 1 tbsp. flour

Blend butter, sugar, vanilla, salt, and juice together. Beat
in eggs one at a time until blended. Dissolve baking soda in sour cream and add to
egg mixture. Fold in flour, nuts, and jam or jelly. Add food coloring and fold until blended. Pour batter into 2 large or 4 small loaf pans that have been buttered and floured or sprayed with cooking spray. Bake 40 minutes in preheated 325° oven.
