Recipe of the Month Breads, Rolls, and Muffins - Easy Pumpkin Bread

  • 1 box yellow cake mix
  • 1 small box instant vanilla pudding
  • 1 tablespoon pumpkin
  • pie spice
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 (15 oz.) can pumpkin (NOT pumpkin pie filling)
  • 1 cup white chocolate chips
  • 1 cup cran-cherries or dried cherries

Whisk eggs with oil. Mix in the cake mix, pudding, spice, and pumpkin. Stir in about ¾ cup of the white chocolate chips and cherries but reserve a handful (1/4 cup) of each for the top. Pour batter into greased loaf fan. Bake at 350° for 55-60 minutes, or until toothpick comes out fairly clean (moist ok). Cool 15 minutes and then remove from pan.
