Breads, Rolls, and Muffins - Cranberry Muffins



INGREDIENTS
  • plain flour
  • 3/4 cup sugar
  • 11/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon soda
  • 1/4 cup oil
  • 1 beaten egg
  • 1 teaspoon grated orange peel
  • 3/4 cup orange juice
  • 3 cups fresh cranberries, chopped
  • 1/2 cup broken pecans

INSTRUCTIONS
Sift dry ingredients.
Combine egg, orange peel, and juice. Stir into dry ingredients; mix until smooth.
Have muffin tin greased; fill each one 2/3 full.
Bake in oven which has been heated to 400ยบ, until they are brown as desired.
