Recipe of the Month Appetizers - Salsa

  • 14 cups tomatoes, skinned and chunked
  • 3 cups onions
  • 2 cups green peppers
  • 1/2 cup vinegar
  • 2 tablespoons salt
  • 11/2 teaspoons ground cumin
  • 1 tablespoon chili powder
  • 1 tablespoon garlic salt
  • 2 tablespoons cilantro
  • 1-2 jalapeño peppers (add a few seeds if you like it hot)

Mix all together and put in jars. Cold pack for 25 minutes in hot water bath. If you prefer thicker salsa, add 1 cup tomato juice and 4 tablespoons unflavored gelatin to ingredients before putting into jars.
