Recipe of the Month Breads, Rolls, and Muffins - Banana-Chocolate Chip Muffins

  • 2 extra-ripe bananas, peeled
  • 2 eggs
  • 1 cup brown sugar, packed
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup walnuts, chopped (optional)

In a large mixing bowl, mix bananas with an electric mixer until they are mashed completely. While mixer is on low speed, add eggs, brown sugar, melted butter, and vanilla. Mix until batter is moistened throughout.

In a separate bowl, combine flour, baking powder, salt, and cinnamon. Add dry mixture to banana mixture. Stir in chocolate chips and nuts, if desired. Spoon into well-greased muffin tins. Bake for 25 to 30 minutes at 350°.

Yield: 12 muffins.
