Breads, Rolls, and Muffins - Georgia’s Date Nut Bread

  • 1 1/2 cups dates, chopped
  • 1 1/2 cups boiling water
  • 1 egg
  • 1 1/2 cups brown sugar
  • 2 tablespoons butter, melted
  • 1/2 teaspoon salt
  • 2 3/4 cups bread flour
  • 2 teaspoons baking soda
  • 1 teaspoon vanilla
  • 1 cup walnuts or pecans, chopped

Cover dates with boiling water and let stand for about 20 minutes.
Cream sugar, egg, and butter. Strain water from dates and add to egg mixture along with sugar. Sift flour, baking soda, and salt together, then add dates, nuts, and vanilla. Pour into two greased loaf pans and bake for one hour at 350°.
