Desserts - Blueberry Cream Cheese Cupcakes



INGREDIENTS
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 2 eggs, beaten
  • 1 can blueberry pie filling (or other fruit filling)
  • 12 cupcake pan liners
  • 12 vanilla wafers

INSTRUCTIONS
Preheat oven to 350ยบ. Using a mixer, combine cream cheese, sugar, and vanilla; gently mix in eggs. Place liners in a 12-cup cupcake pan; put one vanilla wafer in bottom of each liner.
Divide cream cheese filling evenly in each cupcake. Put about 1 tablespoon of fruit filling on top. Bake for 20 minutes. Cool before serving.
