Desserts - Double Peanut Butter Cookies



INGREDIENTS
  • 2¾ cups flour
  • 1 cup sugar
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup shortening
  • 1 cup creamy peanut butter
  • ½ cup light corn syrup
  • 2 tablespoons milk
  • Peanut butter for filling

INSTRUCTIONS
Sift together dry ingredients. Cut in shortening and peanut butter until mixture resembles coarse meal. Blend in syrup and milk. Shape into a 2-inch roll; chill.
Slice dough 1/8-inch to ¼-inch thick. Place half the slices on the cookie sheet; spread each with 1 teaspoon peanut butter. Cover with remaining slices; seal edges with fork. Bake at 350º for about 12 minutes. Cool slightly, remove from sheet.
Yield: Four dozen.
