Beverages - Sparkling Brunch Punch

  • Ice ring:
  • 1 (10-ounce) package frozen raspberries, thawed, drained, reserving syrup
  • Lemon slices
  • Lime slices
  • Punch:
  • 2 (25.4-ounce) bottles sparkling white grape juice, chilled
  • 1 (28-ounce) bottle club soda, chilled
  • 1 (12-ounce) can frozen pink lemonade concentrate, thawed

To prepare ice ring, arrange drained raspberries, lemon slices, and lime slices in an attractive design in a 5-cup ring mold. Pour water into mold to partially cover berries and slices; freeze until firm. Fill water to within 1/2 inch of top of mold; freeze completely.
Prepare punch just before serving. In punch bowl, combine reserved raspberry syrup, sparkling grape juice, club soda, and lemonade concentrate; stir gently to blend. Unmold ice ring and float, fruit side up, in punch bowl.
Yield: 24 1/2-cup servings.
