Breads, Rolls, and Muffins - Zucchini Bread

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 cup chopped pecans or walnuts
  • 1 cup raisins, if desired
  • 2 cups zucchini, peeled and shredded
  • 2 eggs, beaten
  • 11/2 cups sugar
  • 3/4 cup honey
  • 1 cup vegetable oil
  • 2 teaspoons pure vanilla

Preheat oven to 350ยบ. Grease and flour two loaf pans and set aside.
In a bowl, combine flour, baking powder, baking soda, salt, cinnamon, nuts, and raisins, if desired. Sift together, make a well in the center, and set aside.
In a separate bowl, combine zucchini, eggs, sugar, honey, oil, and vanilla. Add to flour mixture and stir just until moistened.
Evenly divide the batter between the prepared pans. Bake 65 minutes or until a tester inserted in the middle comes out clean. Cool in the pans 10 minutes. Remove from pans and cool completely on wire racks.
