Salads - Colorful Tailgate Salad



INGREDIENTS
  • 2 (10-ounce) packages frozen whole kernel corn, thawed
  • 2 cups diced green pepper
  • 2 cups diced sweet red
  • pepper
  • 2 cups diced celery
  • 1 cup minced fresh parsley
  • 1 cup chopped green onions
  • ½ cup shredded Parmesan cheese
  • 2 teaspoons ground cumin
  • 1½ teaspoons salt
  • ¾ teaspoon pepper
  • ½ teaspoon hot pepper sauce
  • 1/8 teaspoon cayenne pepper
  • 3 tablespoons olive oil
  • 2 garlic cloves, minced
  • 6 tablespoons lime juice

INSTRUCTIONS
In a large bowl, combine the first 12 ingredients. In a microwave-safe dish, combine oil and garlic. Microwave, uncovered, on high for 1 minute. Cool. Whisk in lime juice. Pour over corn mixture and toss to coat. Cover; refrigerate until serving.
