Recipe of the Month Appetizers - Stuffed Jalapeño Peppers



INGREDIENTS
  • 10-12 large jalapeño peppers
  • 2 pounds ground beef
  • 1 small onion, diced
  • 1 (16-ounce) bar sharp Cheddar cheese
  • 1 pound bacon

INSTRUCTIONS
Slice peppers in half, length-wise; remove seeds. Mix ground beef and onions together. Slice cheese in ½-inch strips. Place one cheese strip in each pepper half and stuff beef mixture on top of the cheese. Cut bacon slices in half and wrap one around each stuffed pepper.
Place peppers on a baking pan and bake for 20 minutes at 300°. Turn the oven to broil and cook until the bacon begins to brown. Turn off the heat and allow the peppers to cook until the oven cools.
