Fruits and Vegetables - Baked “Fried” Squash

  • 2-3 medium yellow squash (or zucchini)
  • 1 egg
  • 1 tablespoon water
  • 11/2 cups cornmeal mix
  • Salt and pepper, to taste
  • Preheat oven to 450º and place rack on highest position.

Cut off each end of the squash and discard. Slice squash into 1/2-inch thick round slices. In a medium bowl, slightly whisk the egg with water. In a gallon-size bag or medium bowl, place cornmeal mix along with salt and pepper. Line cookie sheet with aluminum foil and coat with butter-flavored cooking spray. Dip the squash in egg wash, then in cornmeal, making sure it’s completely covered. Place pieces in single layer on baking sheet. Spray tops of squash with butter-flavored cooking spray. Bake for 15-20 minutes or to desired doneness.
