Desserts - Coconut Pound Cake



INGREDIENTS
  • 11/2 cups shortening
  • 21/4 cups sugar
  • 5 eggs
  • 1 cup milk
  • 3 cups plain flour
  • 2 teaspoons coconut flavoring
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 (7-ounce) package flaked coconut

INSTRUCTIONS
Combine shortening and sugar. Beat in eggs, one at a time, and mix on high speed for 10 minutes. Add milk and flour alternately with other ingredients. Fold in coconut. Pour batter in a well-greased and floured 10-inch tube pan. Place pan in a cold oven and turn the heat to 325ยบ. Bake for 1 hour and 25 minutes. Cool for a few minutes and remove from pan.
