Breads, Rolls, and Muffins - Whole-Wheat Carrot Muffins



INGREDIENTS
  • 2 cups whole-wheat flour
  • 1 cup granulated sugar
  • 2 teaspoons baking soda
  • 1 tablespoon cinnamon
  • 1 teaspoon salt
  • 2 cups grated carrots
  • 1/3 cup finely diced dried apricots or 1/3 cup apricot preserves
  • 1/3 cup mini chocolate chips
  • 1/3 cup coconut
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts
  • 3 eggs, slightly beaten
  • 3/4 cup oil
  • 2 teaspoons vanilla
  • Powdered sugar

INSTRUCTIONS
In a large mixing bowl, sift dry ingredients; add carrots, apricots, chocolate chips, coconut, pineapple, and walnuts. Add eggs, oil, and vanilla; mix all until dry ingredients are moistened. Scoop into paper-lined muffin tins. Bake at 375ยบ for 15-18 minutes. Dust with powdered sugar.
