Recipe of the Month Salads - Chicken Fruit Salad



INGREDIENTS
  • • 4 tangerines or 3 small oranges
  • • 3 cups cubed, cooked chicken
  • • Salt and pepper to taste
  • • 1/2 cup chopped celery
  • • 3 boiled eggs, quartered
  • • 1/2 cup red or green seedless grapes
  • • 1/2 cup mayonnaise or salad dressing
  • • 1/2 teaspoon dry mustard
  • • 6 lettuce cups

INSTRUCTIONS
Peel tangerines or oranges; section and dice them over a bowl to catch the juice; reserve juice. Season chicken lightly with salt and pepper. Combine diced citrus, chicken, celery, quartered boiled eggs, and grapes. Cover and chill.
Combine mayonnaise, 2 teaspoons reserved tangerine or orange juice, and dry mustard before serving. Lightly toss the chicken-fruit mixture with dressing; serve the salad in lettuce cups.
