Breads, Rolls, and Muffins - Deep Dish Pizza

  • Crust:
  • 3 1/2 cups all-purpose flour
  • 1/4 cup cornmeal
  • 1 1/4 teaspoons yeast
  • 1 1/2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1 cup water
  • 1/3 cup oil
  • 1 cup shredded mozzarella cheese
  • Sauce:
  • 1 can diced tomatoes
  • 1 can tomato paste
  • 1/2 teaspoon salt
  • 1/4 teaspoon each garlic powder, oregano, basil and pepper
  • Toppings of your choice

In a large mixing bowl combine flour, cornmeal, yeast, sugar, and salt. In a saucepan, heat water and oil just until it starts to boil. Add to dry ingredients; stir together to form a stiff dough. Turn onto a floured surface and knead until smooth. Cover and let rise until doubled. Punch down and divide in half. Roll each portion into a circle and press onto bottom and up the sides of two greased iron skillets. Sprinkle 1/2 cup mozzarella cheese on the bottom of each crust.
In another bowl, prepare sauce by combining tomatoes, tomato paste, and seasonings. Spoon 1/2 mixture over each crust. Layer with your choice of toppings (ham, sausage, pepperoni, etc.) and top with mozzarella cheese. Cover and bake for 30 minutes at 350ยบ. Uncover and bake five more minutes or until cheese melts.
