Fruits and Vegetables - Garden Greens with Warm Bacon Dressing

  • Dressing:
  • 6-8 slices thick bacon
  • 2 tablespoons chopped shallots
  • 1/2 cup red wine vinegar
  • 2 tablespoons dijon mustard
  • 1 1/2 tablespoons honey
  • Salt and pepper
  • Salad:
  • 4 cups fresh spinach
  • 4 cups fresh leaf lettuce
  • 1/2 pound sliced mushrooms
  • 1/2 cup thinly sliced red onion

Fry bacon until crispy, drain on paper towel, and crumble. Add shallots to bacon drippings and sauté for two to three minutes. Remove from heat and whisk in vinegar, mustard, honey, salt, and pepper. Return to low heat to keep warm.
In a large bowl, toss together salad ingredients along with crumbled bacon. Pour warm dressing over salad and serve immediately.
