Recipe of the Month Soups - Cajun Okra-Green Chile Stew

  • 2 pounds ground chuck
  • 2 onions, chopped
  • 1 can pinto beans
  • 1 can tomatoes
  • 1 cup water
  • 2 cans chopped green chilies
  • 4 large potatoes, cubed
  • 3 tablespoons beef bouillon
  • 1 tablespoon sugar
  • 2 tablespoons Creole seasoning
  • 2 tablespoons garlic
  • 2 pounds cut okra
  • Monterey Jack cheese
  • Flour tortillas or rice

Brown beef and onions, drain. Add everything except okra, cheese, and tortillas. Cook uncovered one hour. Add okra and cook 40 minutes longer.
Serve in bowls with grated Monterey Jack cheese sprinkled on top along with warm tortillas to dunk into the stew. Or, you can serve the stew over rice.
