Fruits and Vegetables - Sweet Potato Rollups

  • 3 large sweet potatoes, cooked and mashed
  • 1/2 stick butter
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 2 (8-ounce) tubes refrigerated crescent rolls
  • 1 1/2 sticks buttter
  • 1 1/2 cups water
  • 1 1/2 cups sugar

Add 1/2 stick of butter, brown sugar, and cinnamon to hot mashed sweet potatoes; mix well.
Grease a 9-x-13-inch baking dish. Preheat oven to 350ยบ. Unroll crescent dough and separate into triangles. Spoon a teaspoon of mixture into each roll. Roll up crescents and place into dish.
In a pan, add 11/2 sticks butter, water, and sugar and bring to a boil. Pour over crescent rolls and sprinkle with a little cinnamon. Bake about 25 minutes or until brown.
