Desserts - Chocolate-Covered Cream Cheese Cookies



INGREDIENTS
  • Cookies:
  • 1/4 cup sugar
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/2 teaspoon vanilla
  • 1/8 teaspoon salt
  • Filling:
  • 1 (3-ounce) package cream cheese, softened
  • 1 cup powdered sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla
  • Icing:
  • 1/2 cup semi-sweet chocolate chips
  • 2 tablespoons butter or margarine
  • 2 tablespoons water
  • 1/2 cup powdered sugar

INSTRUCTIONS
Cream sugar and butter. Beat in flour, vanilla, and salt. Roll into small balls; place on ungreased cookie sheets and push thumb in centers. Bake at 300° for 20-30 minutes (they will not brown).
Mix cream cheese with powdered sugar, flour, and vanilla until smooth. Fill thumb holes of cookies while still warm.
Melt chocolate chips; add butter or margarine and water. Blend over low heat. Stir in sugar. Frost cookies on top of cream cheese filling.
