Cakes and Pies - Mound Cake

  • 1 box chocolate cake mix
  • Filling:
  • 1 cup sugar
  • 1 cup milk
  • 30 large marshmallows
  • 1 (14-ounce) package shredded coconut
  • 1 cup pecans, chopped (optional)
  • 1 teaspoon vanilla
  • Icing:
  • 1/2 cup cocoa
  • 1/2 cup milk
  • 2 cups sugar
  • 1/4 cup white corn syrup
  • 1 stick butter or margarine
  • 1 teaspoon vanilla

In a 9- by 13-inch pan, bake cake according to package directions. Split into layers when cool.

Heat sugar and milk until sugar is melted. Add marshmallows and bring to a boil. Remove from heat and stir in coconut, pecans, and vanilla. Spread filling between cake layers.

Mix first four ingredients and bring to a boil. Remove from heat. Add margarine and vanilla. Stir until blended. Refrigerate until very cold, and then spread icing on cake.
