Breads, Rolls, and Muffins - Lettuce Bread

  • 2 eggs
  • 1 cup sugar
  • ½ cup oil
  • 1½ teaspoons grated lemon rind
  • 1½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon ginger
  • 1 cup lettuce, finely chopped
  • ½ cup nuts, chopped

Beat together eggs, sugar, oil, and lemon rind. Add sifted flour, baking powder, salt, ginger, and lettuce. Beat well; stir in nuts. Bake in a greased 9-x-5-inch loaf pan at 375° for 55 minutes. Cool 15 minutes in pan. Remove and sprinkle with powdered sugar, if desired.
Note: This can be made from leaf lettuce from the garden or regular head lettuce. It’s pretty and different.
