Recipe of the Month Salads - BLT Chicken Salad



INGREDIENTS
  • 8 cups lettuce
  • 3 to 6 hard-boiled eggs, diced
  • Fresh green onions, chopped, (to taste)
  • 3 cups diced, grilled chicken breast fillets
  • Sliced tomatoes (to taste)
  • 10 slices bacon, cooked and crumbled
  • Shredded Cheddar cheese
  • Dressing:
  • ½ teaspoon black pepper
  • ½ cup mayonnaise
  • 1 tablespoon lemon juice
  • ¼ cup barbecue sauce
  • 2 tablespoons grated onion

INSTRUCTIONS
Mix first five ingredients together. Top with bacon and cheese. Combine dressing ingredients and pour over salad; serve immediately.
