Breads, Rolls, and Muffins - Sweet Potato Muffins



INGREDIENTS
  • ½ cup butter of margarine, softened
  • 1¼ cups sugar
  • 2 eggs
  • 1¼ cups cooked, mashed sweet potatoes
  • ¼ to 1/3 cup milk
  • 1½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ cup raisins
  • ¼ cup chopped pecans
  • 2 tablespoons sugar
  • ¼ teaspoon ground cinnamon

INSTRUCTIONS
Cream butter; gradually add 1¼ cups sugar, beating at medium speed with electric mixer. Add eggs, one at a time, beating well after each. Stir in potatoes and milk. Combine next five ingredients; add to creamed mixture, stirring just until moistened. Stir in raisins and pecans. Spoon into greased muffin tins, filling each cup 2/3 full.
Combine the 2 tablespoons sugar with ¼ teaspoon cinnamon; sprinkle over batter. Bake at 400° for 20 to 25 minutes.
Yield: 2 dozen.
