Honeydew Delight

Ingredients

  • 1 honeydew melon (about 5 pounds) or 2 medium cantaloupes
  • 1 (4-serving) package gelatin, any flavor
  • 3/4 cup boiling water
  • 1/2 cup cold water
  • Ice cubes
  • 1 banana, sliced

Instructions


Cut melon in half lengthwise. Scoop out seeds, drain well, and chill. Dissolve gelatin in boiling water. Combine cold water and ice cubes to make 1 cups; add to gelatin, stirring until slightly thickened. Remove any unmelted ice. Add banana.
Place melon halves in small bowls. Spoon gelatin mixture into melons. Chill until firm, about three hours. Cut into wedges to serve.
