Tangy Watermelon Salad

Ingredients

  • 14 cups cubed, seedless watermelon
  • 1 cup chopped green onions
  • 1 medium red onion, halved and thinly sliced
  • 3/4 cup orange juice
  • 2 tablespoons plus 1 teaspoons honey
  • 1 tablespoon finely chopped sweet red pepper
  • 5 tablespoons red wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon ground mustard
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 3/4 cup vegetable oil
  • Instructions


    In a large bowl, combine watermelon and onions. In a small bowl, combine orange juice, honey, red pepper, vinegar, and seasonings. Slowly whisk in oil. Pour over watermelon and onion mixture and toss gently.
    Cover and refrigerate for at least two hours, stirring occasionally.
    Yield: 16 servings.
