Butter Pecan Ice Cream

Ingredients

  • 1 cup chopped pecans
  • 1 large package instant vanilla pudding
  • 2 teaspoons vanilla
  • 1 1/2 teaspoons maple extract
  • 2 cups sugar
  • 1 (14-ounce) can sweetened condensed milk
  • 1 1/2 teaspoons butter extract
  • 2 cups whipping cream
  • 4 to 5 cups milk
  • Instructions


    Spread pecans on baking sheet. Roast at 300° for 10 minutes, stirring occasionally. Set aside.
    Beat pudding, vanilla, maple extract, sugar, condensed milk, and butter extract until smooth. Fold in pecans and whipping cream. Pour into a one-gallon ice cream freezer container. Add milk to fill line. Freeze according to directions.
    Yield: 16 servings.
