Country Style Pork Spare Ribs

Ingredients

  • 4 pounds country-style spare ribs
  • 2 teaspoons butter or margarine
  • 1/2 cup onion, chopped
  • 1 cup tart apples, chopped
  • 2 cups rice, cooked
  • 2 cups sweet potatoes, chopped and cooked
  • 2 tablespoons brown sugar
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • Applesauce glaze:
  • 1/2 cup honey
  • 1/2 cup applesauce
  • 2 tablespoons lemon juice
  • Instructions


    To make stuffing, saute onion and apples in butter for five minutes; add the next five ingredients. Mix well.

    Cut spare ribs into four sections and season with salt and paprika. Spread half of stuffing on two sections of ribs. Place remaining two sections of ribs on top and secure together with unwaxed string on the ends of ribs. Bake in shallow baking dish at 450°F. for 15 minutes. Reduce heat to 325°F. and bake one hour.

    Blend honey, applesauce, and lemon juice to form a glaze. While ribs are baking, brush them frequently with applesauce glaze.
