Herbed Garlic Potatoes

Ingredients

  • 15 small red potatoes (about 2 pounds)
  • 1/3 cup butter or margarine
  • 1/4 cup minced fresh parsley
  • 2 tablespoons minced fresh or dried chives
  • 1 teaspoons minced fresh tarragon or teaspoon dried
  • 2 to 3 garlic cloves, minced
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 bacon strips, cooked and crumbled
  • Instructions


    Cut potatoes in half and place in a saucepan; cover with water. Cover and bring to a boil; cook until tender, about 15 minutes. Drain well.
    Melt butter in a large skillet. Add parsley, chives, tarragon, and garlic; cook and stir over low heat for one to two minutes.
    Add drained potatoes, salt, pepper, and bacon; toss to coat. Cook until heated through, about five minutes
    Yield: Six to eight servings.
