Cucumber Kim-Chee

  • 2 medium cucumbers
  • 2 medium carrots
  • 1 bunch green onions (about 6 small ones)
  • 1 tablespoon Accent seasoning
  • 1 teaspoon salt
  • 1 garlic clove, crushed
  • 1 tablespoon red pepper (American or Korean)


Cut unpeeled cucumbers length-wise and slice thinly. Grate carrots and chop onions.
Add to cucumbers; stir. Add remaining ingredients and stir. Refrigerate for one hour.
Serve as a side dish or on top of rice. Adjust red pepper if you don’t want the mixture hot.
