Polish Bacon-Cheddar Wrap

Ingredients

  • 1 package of four Polish sausages
  • 1 (8-ounce) package Cheddar cheese, thinly sliced
  • Bacon strips
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 1 large bag slaw mix
  • cup oil
  • 1 package sub roll buns
  • 4 slices pepperjack cheese
  • Barbecue sauce
  • Instructions


    Slice open each Polish sausage lengthwise, being careful not to cut all the way through. Stuff each with equal amounts of Cheddar cheese. Wrap bacon strips tightly around each sausage and secure with toothpicks at ends and middle of sausage to hold together. Place sausages in baking dish and bake at 300º until they are plump.
    Heat oil in a skillet; add onions, peppers, and slaw mix and cook over low heat until brown. Slice sub rolls halfway through and place a slice of pepperjack cheese in each. Place sausage on top and cover evenly with onion mixture. Pour barbecue sauce over top. Place in pan and toast on low heat.
    Note: Don’t forget to remove toothpicks from sausages before they’re placed on buns.
