Stuffing for Turkey

Ingredients

  • 1 (14 3/4-ounce) can cream-style corn
  • 1 (4-ounce) can chopped green chilies
  • 1 (4 1/2-ounce) can sliced ripe olives, finely chopped
  • 1/2 cup shredded Colby-Jack cheese
  • 1/2 cup finely chopped onion
  • 1/2 cup chopped green or sweet red pepper
  • 1 tablespoon minced fresh parsley
  • 1 egg, lightly beaten
  • 1 (16-ounce) package cornbread stuffing, crushed, or 6 cups crumbled cornbread
  • 1 1/2 cups warm chicken or turkey broth
  • Instructions


    In a large bowl, combine the first eight ingredients. Add broth and stuffing or cornbread and toss lightly. Just before baking, loosely stuff the turkey.
    Place remaining stuffing in a greased 1-quart baking dish. Bake at 350° for 40 to 50 minutes or until thoroughly heated.
