Green Pickles

  • 1 gallon cucumbers
  • 1 gallon water
  • 1 cup lime
  • 1 teaspoon green food coloring
  • 1 teaspoon whole cloves
  • 2 teaspoons pickling spices
  • 4 1/2 pounds sugar
  • 2 quarts white vinegar
  • 1 teaspoon salt
  • 1 teaspoon celery seed
  • Instructions

    Peel cucumbers and cut into 3-inch strips; remove seeds. Combine water with lime and add cucumbers. Place in refrigerator for 24 hours.
    Rinse cucumbers and add fresh water. Place in refrigerator for 24 more hours.
    Drain cucumbers. Make a syrup by combining remaining ingredients. Add cucumbers and simmer for 40 minutes. Pack in jars.
    Note: A friend, who has since passed away, gave me a jar of these pickles. They are the best sweet pickles I have ever eaten.
