Creamy Red Cabbage Slaw

  • 1 pound red cabbage, quartered, cored, and chopped
  • 1 medium red onion, thinly sliced
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1 tablespoon balsamic vinegar
  • 1/2 packet sugar substitute
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon chopped fresh tarragon or 1/2 teaspoon dried tarragon
  • Instructions

    In a large bowl, combine red cabbage and onion. In a small mixing bowl, combine remaining ingredients and add to cabbage mixture. Toss to coat. Refrigerate for at least one hour so flavors can blend. Can be made up to one day before serving.
